Is the lockdown preventing you from biting into a juicy piece of tandoori chicken because the shop's shut down? Or are you stuck in with your vegetarian family members within the four walls of your meat-free zone? I understand your suffering and your cravings. This lockdown so far has taught me that nothing is permanent, and we eventually have to part ways with the things that we love. In this journey of separation, we ultimately find love in the most unexpected things- vegetarian food (at least in my case).
Vegetarian food can be a delight to eat (no, this is not sponsored). It is super easy to cook and doesn't compromise with the taste (if you follow the recipe ofc!).
Here is a list of my favourite vegetarian dinner meals for your Indian household that is unchallenging to cook and tastes brilliant.
1. Paneer Butter Masala

I've heard every vegetarian boast about this dish at some point in their lives. With loads of butter, ghee, and chunks of paneer in the creamy orange gravy, this dish becomes an ultimate hit at the dinner table.
2. Hyderabadi Bagara Baingan

I was never an aubergine's fan until I got to taste this beauty. This Hyderabadi recipe is one of the finest things that one could make out of brinjals. The dish also constitutes great flavours of peanuts, sesame seeds, and coconut. On the whole, this dish is a winner for dinner.
3. Malai Kofta

Soft paneer and potato koftas dipped in a fancy creamy curry is a must-have this quarantine. The cashews and cream in the curry add a rich flavour to it and the fried cottage cheese and potato balls along with the gravy is all you need.
4. Vegetable Kurma

Another synonym for home is thick coconut gravy over steamed vegetables aka veg kurma. Famous in the south of India, this dish also comprises of cashew nuts and poppy seeds to thicken the gravy and add texture to it. It's easy to cook and goes very well with steamed rice or appam.
5. Mushroom Do Pyaza

As the name suggests, Mushroom Do Pyaza is button mushrooms cooked with truckloads of onions and roasted spices. It also has other variants to it - bhindi do pyaza, chicken do pyaza and paneer do pyaza. It's easy to cook and tastes heavenly.
6. Gobi Mussallam

Baked whole cauliflower cooked with cream and spices or Gobi Mussallam is a conqueror. It's magnificent to look at and tastes great with naan or rumali rotis.
